Heritage Pork Rillette
Our Heritage Pork Rillette is made from a classic pork confit - heritage breed pork slowly simmered overnight in its own fat - that is shredded and mixed with a savory blend of rosemary, thyme, sage, mustard, and pepper. Preserved with a thin layer of fat, rillettes are perfect for serving as a thick spread atop toasted rustic bread along with cornichons, whole grain mustard, or fruit preserves. They are delicious with crudité or even as a pasta stuffing. Treat yourself!
When pairing wine with this classic French dish, you can go red or white. We recommend either a red or white Burgundy. Other nice pairings are cool climate unoaked or subtly oaked Chardonnay or Pinot Noir or a dry Alsace Riesling or Pinot Gris or a Vouvray.
