During this interactive demonstration, Chief Butcher Rusty Bowers & the Pine Street Market crew break down a whole pig while explaining the various cuts of meat and the nuances of butchery. Participants slice their own pork chops and create two pounds of bacon!
Sausage Making Class $125
Come join our butchers for a hands on sausage-making workshop as they explain a variety of grinding, casing, and cooking methods. Participants take home two pounds of their own sausage creation.
Cured Meat Class $125
Come join Chief Charcutier Rusty Bowers & the Pine Street Market crew for a hands on cured meat workshop as they explain how to make salami, guanciale, pancetta, and various cured hams. Participants grind, season, and stuff their own salamis and dry cure guanciale.
Lamb Chop Class $125
Join our Lamb Chop Class, where you’ll learn to break down a locally-sourced whole lamb from White Oak Pastures! You'll create chops, roasts, lamb steaks, and other delicious lamb preparations. Each participant will take home a selection of lamb roasts and steaks that they butcher!

We've taught you the basics Pork, Beef, Chicken, & Lamb. Now it's time to get more exotic & creative. Join Rusty & several local chefs to learn about tips & tricks to make their favorite unusual meats delicious.
Cold Smoking on the Big Green Egg $125
Join Rusty and Tommy on the Chop Shop event patio to learn how to turn your Big Green Egg into a Cold Smoker without breaking the bank! Learn how to cold smoke cheeses and cure and smoke salmon.
