A slight departure from our local philosophy, we're featuring Colorado lamb for its exceptional flavor. Colorado is a “natural” state for lamb farming. Sheep favor mountains and hills, of which there are plenty in the Rocky Mountain State. It’s also a plentiful source of their preferred diet of brohm grass, service berries, larkspur, knapweed and wild carrots. Colorado ranchers also breed for larger animals that provide more succulent & tender meat. We think you'll taste the difference.
