All the succulence of a Ribeye Steak with the tenderness of Filet Mignon, the New York Strip Steak is cut from the short loin of a cow. The short loin consists of muscle that does little work, making it a particularly tender cut of beef that also boasts a fat cap that protects and bastes the meat as it cooks.
