Hog Wash


Why Brine? Meat Science. Season your meat from the inside out. Using Hog Wash will give you piece of mind by helping your butts, chops, and hams stay juicy and delicious as they cook. Hog Wash is a perfectly balanced blend of kosher salt, brown sugar, citrus, and our special blend of herbs and spices!


Hog Wash is priced per 12 oz portion, enough for 12 pints of brine.


  • In a large pot over high heat, add 24 cups of water and 12 oz. of Hog Wash, and bring to a boil. Turn down the heat after the mixture comes to a rolling boil. Simmer until the mixture completely dissolves. Cool to room temperature and refrigerate overnight.


    Only use the brine when it is cold!  Brine the meat under refrigeration for an appropriate time (see below) and discard the brine after you remove the meat. Pat the meat dry and it is ready to cook, requiring no additional seasoning!


    Brining times:

    Pork Tenderloin - 2 hours

    Pork Chops (1 inch) - 4 hours

    Pork Loin Roast - 12 hours

    Boneless Ham (5 lbs.) - 3 days
