Our Butchers hand cut each 4 oz. Pork Loin Medallion Filet and wrap them with a slightly rendered slice of our Heritage Bacon to baste the tender medallion as it cooks.   We recommend pan searing this cut and finishing in the oven to an internal temperature of 150F for a meaty, smokey treat!
