  • Bratwurst - Seasoned with garlic, nutmeg, and black pepper. Perfect for grilling or braised in your favorite beer
  • Smoked Kielbasa - Smoked over pecan wood & seasoned with mustard, garlic, and marjoram.
  • Smoked Mettwurst - Smoked over apple wood and flavored with coriander, garlic, and white peppercorns.
  • Italian Sausage - Flavored with fennel, garlic and, chilies.  Available in spicy or mild.
  • Andouille - Smoked and seasoned with chilies, allspice, and garlic.
  • Frankfurter - This all-natural pork & beef sausage is made free of preservatives or fillers. Lightly seasoned with garlic.
  • Irish Bangers - Irish whiskey, lemon zest, and herbs spice up this classic sausage.
  • Toulouse Sausage - Traditional French sausage with white pepper, nutmeg, and ginger. Serve with lentils or in a cassoulet.
  • Spiced Pear Sausage - Applejack Brandy, nutmeg, ginger, and pear. Available in Fall and Winter.
  • Roasted Poblano Sausage - Roasted poblano peppers, ancho chilies, garlic & cumin. Available in Spring & Summer.


Bulk Sausage

  • Mexican Chorizo - Oregano, fresh garlic, chipotle and ancho chilies give this sausage a classic, spicy kick.
  • Country Sausage - Seasoned with black pepper and sage. Great for breakfast or in a savory stuffing.
  • Applewood Bacon Burger - Our applewood smoked bacon ground with fresh pork for the ultimate rich, smoky burger.



  • Picnic Salami - Petit salami classically seasoned with black pepper and fresh garlic.
  • Petit Paprika Salami - Traditional Hungarian salami flavored with paprika, chilies, and Pinot Grigio.
  • Petit Herb Salami - Salami delicately seasoned with Herbes de Provence (lavender, rosemary, & thyme).
  • Valencia Salami - Salami lightly seasoned with orange zest and coriander.
  • Thuringer Salami - Flavored with black pepper & ginger then smoked all night over pecan wood.
  • Spanish Chorizo - Smoked Spanish paprika, fresh garlic, and oregano marry together to flavor this spicy salami.
  • Fennel Salami - Classic salami made with Pinot Noir, toasted fennel, and black pepper.
  • Sopressata Salami - Coarse ground salami made with white and black peppercorns, Pinot Grigio, and warm earthy spices.
  • Saucisson Sec - French style salami seasoned with black pepper, garlic, and a splash of brandy.


Cured Meats

  • Beechwood Smoked Speck - Boneless, smoked prosciutto aged with black pepper & juniper berry aged for 6 months.
  • Boneless Prosciutto - Cured with salt and pepper and aged for 9 months.
  • Coppa - Dry cured pork shoulder spiced with black pepper and chilies. Aged for 6 months.
  • Pancetta - Aged pork belly cured with black pepper, thyme, and a hint of nutmeg.
  • Guanciale - Pork Jowl cured with chilies and garlic. Use for classic Italian pasta dishes and braises.



  • Applewood Smoked Bacon - Dry rubbed with maple and molasses then slowly smoked over apple wood.
  • Smoked Pepper Bacon - Our applewood smoked bacon cured with black pepper and chilies for a spicy kick.
  • Bacon Ends - Applewood smoked bacon cuts perfect for seasoning salads, greens and soups.
