Owner & Chief Charcutier
A classically-trained chef who fell in love with the art of butchery. Rusty opened Pine Street Market in 2008 to provide quality hand-crafted artisan meat provisions. An enthusiastic educator, on any given Saturday, you can find him teaching classes ranging from whole hog butchery to sausage-making and curing meats. When he’s not teaching classes, you can find him popping in at local farmer’s markets to give cooking demonstrations or chat with local purveyors, in the production area of Pine Street Market working on a new creation to share with his loyal customers, or hanging out with his financée, Summer, and Gracie, the quirky cockapoo.
The woman behind the machine...the bacon slicing machine, that is. Each week Lydia assists in slicing and packaging over 1,000 pounds of bacon. She enjoys cooking and spending time with her family; her six children are all grown up and now she has grandchildren to spoil. Lydia loves shopping – from food and clothes to home décor - she loves it all!
